ROASTED LA GABRIELLE POTATOES

Ingredients

  • 12 fingerling La Gabrielle de l’Ile d’Orléans potatoes
  • 3 slices of bacon
  • 25 ml olive oil
  • 5 sprig of fresh thyme
  • 1.5 tbs. of fresh oregano finely chopped
  • 1 tbs. finely chopped fresh parsley
  • Salt and pepper

Preparation

Preheat oven at 400F.
Cut potatoes in half lengthwise.
Finely chop the bacon.
Put the potatoes in a ovenproof dish.
Mix the potatoes with oil, bacon, fresh herbs (except the parsley)
Add salt and pepper.
Cook them at 400F during approximately an hour.
Serve with parsley.
