Ingredients
- 12 to 16 La Gabrielle de l’Île d’Orléans or La Gabrielle Organic – l’Île d’Orléans potatoes
- 3 slices of bacon, cooked
- 25 ml of olive oil
- 5 sprigs of fresh thyme
- 1.5 tbsp. (approx. 22 ml) of finely chopped fresh oregano
- 1 tbsp. (15 ml) of finely chopped parsley
- Salt and freshly ground pepper to taste
Preparation
- Preheat the oven to 205°C (400°F).
- Cut the potatoes in half lengthwise, do not peel.
- Finely chop the cooked bacon
- In an oven-proof dish, mix the potatoes with oil, bacon and fresh herbs (excluding the parsley). Salt and pepper to taste.
- Bake for 1 hour. Turn potatoes after 30 minutes. Add the parsley when the potatoes are cooked and serve.
