  1. Preheat the oven to 205°C (400°F).
  2. Cut the potatoes in half lengthwise, do not peel.
  3. Finely chop the cooked bacon
  4. In an oven-proof dish, mix the potatoes with oil, bacon and fresh herbs (excluding the parsley). Salt and pepper to taste.
  5. Bake for 1 hour. Turn potatoes after 30 minutes. Add the parsley when the potatoes are cooked and serve.
